I'm thinking about trying a perch chowder with some of those monster Carmi perch. ANybody have a favorite recipe ?

I have made chowder quite a few times but have never been happy with the outcome. My only two suggestions would be less is more and bacon is necessary. Here is the recipe I liked the best. I like to use heavy cream, corn, lots of celery, bacon, taters cut real small, carrot, onion, heavy amount of old bay seasoning, a bay leaf, salt/pepper, garlic.
Start with bacon and onions, they will produce a lot of moisture, then add the others with enough water to cover them all, this makes the veggie base, then add spices and heavy cream. I add fish right at the end with a handful of fresh parsley.
Add spices to taste if necessary.

1 pkg bacon 1 lg onion chopped 2 lg cream of mushroom soup 2 whole corn heavy cream cook the bacon and onions till they are just about done (not crispy) Drain the grease add the cream of mushroom and heavy cream and corn and let it all cook slow on low for a long time add cream or milk as needed near the end add your fish This is super easy and taste wicked good!!!

hmmmm, I thought that fish chowder would be a healthy , low fat, low cholesterol , meal. Guess not.
